The Charybdis Collectible Chef or Carving Knives and Forks
Custom design is what we do! Each set is a one-of-a-kind bespoke work of functional art for the home and made to last for a lifetime of use and be handed down as an heirloom to the next generation with proper use.
Charybdis chef, carving, and steak knives and sets are available in several sizes and either top-quality stainless steels or carbon steel choices.

We are excited to announce that all of our Charybdis design blades can now be ordered in your choice of hidden tang (above) or full tang (below) handle options. Each of these choices can also be made with your choice of custom handle decorative options.
Featuring a unique, breathtaking Damascus pattern, they are simply the best in culinary, steak, and carving sets.
What is the difference in hidden tang or full tang? In a full-tang design, the handle must be made in the shape of the tang and steel can be seen along the edges of the handle.
Hidden tang styles allow us the flexibility to create your handle in any shape and style you like, from simple to very decorative as demonstrated in the carving set below..
Our Charybdis chef and carving knives and sets are available in several sizes and in either stainless damascus or traditional carbon steels that feature the same unique, breathtaking Damascus whirlpool pattern finish this bladesmith is known for.
For a slimmer slicing knife, we now offer a beautiful "kiritsuke" slicing knife. Our exclusive kiritsuke design features a slight rounding of the blade profile plus a 'tanto' tip for making clean start cuts on bread or in-between bones. This style can be ordered in our hidden tang version shown above or choose a full-tang western style handle.
This exquisite blade and Damascus pattern is the work and creation of an 8th generation Japanese master blade maker, and we are excited to feature his amazing workmanship as our newest collectible. The blades are designed by and made exclusively for Salter Fine Cutlery. Each blade is signed in kanji by the bladesmith.

For the absolute highest quality stainless steel knives available anywhere, we offer these amazing blades in R2 or SRS13 Japanese powder metal die stainless damascus steels.
For the purist who loves carbon steel, our blades can be ordered in Shirogami YSS white paper carbon steel, also featuring the "Charybdis" whirlpool damascus finish.
Whether you order in carbon steel or stainless, you will receive a knife of the finest quality that can be enjoyed and passed to future generations.
For those not familiar with metric blade sizing, the blade sizes available are approximately: 10.5-inch carving knife, 9.5-inch carving, slicing or chef knife, 8-inch standard chef knife, 7.25-inch vegetable knife, 6.75-inch small chef knife, 6-inch utility knife, 5-inch utility, steak, or sandwich knife, 4-inch and 3.3-inch paring knife.
As part of our Collectors Series, these knives have our signature custom, handcrafted handles in your choice of our rare, premium grade curly koa wood or thuya burl handles with finishing accents of Mozambique ebony, Hawaiian mango, or black buffalo horn. Other woods or materials can be used upon request.
Because the whirlpool Damascus pattern on these blades is so remarkable, this collectible chef knife deserved a name befitting its rarity.
Charybdis (kǝ-rib-dǝs), in Greek mythology, was born a naiad, a beautiful sea nymph, daughter of Poseidon and Gaia. Together Charybdis and her father, Poseidon (god of the sea), used their power to flood and conquer land. Infuriated, Zeus punished Charybdis by transforming her into a sea monster and chaining her to the Strait of Messina off the coast of Sicily, where she has engulfed passing ships in her infamous and vicious “whirlpool of death.” Odysseus narrowly escaped Charybdis as he navigated this passage in Homer’s Odyssey.
We bring you the mystique of this mythology sea monster in the depths of our bladesmith’s signature Damascus pattern, so unique and rare that it is registered with the government of Japan.

Above: This 127mm clip-point blade is longer, wider and a bit thicker than the more delicate appearing 120mm version shown below. These special design blades are 120mm (4-3/4 inches) in length, with our own design clip-point styling. Made exclusively for Salter Fine Cutlery, they are made with the highest quality Japanese stainless steels and can be made with your choice of handle materials and styling.
The Charybdis chef knife can be designed with your choice of fittings at either the top or the bottom of the handle, or at both ends for an extra-decorative look. (Additional fitting configurations are available upon request, including highly decorative artist-series creations.)

We offer custom, handcrafted koa sayas (sheaths), koa boxes, koa stands, traditional block style stands,in-drawer storage racks, or magnetic koa wood racks for any of our hand-forged chef knives. Sayas are handcrafted to match your knife handle and internally lined in non-reactive wood for ultimate protection for your knife.
