Each of the knives has been hand-forged in the Osaka region of Japan, known for the highest quality traditional shirogami carbon steel chef knives. Each has been signed by the blademaker in kanji, so you can rest assured that you are receiving an original work of art by the blacksmith.
We only ordered a limited amount of these blades and most have already been pre-sold or reserved. However, we do have the following blades available for your custom handle order.
180mm Small Gyuto: Shirogami YSS white paper carbon steel with black matte finish. Suitable for right-handed chefs. Single sided (also known as single bevel) blade edge.
165mm Nakiri (vegetable knife): Shirogami YSS white paper carbon steel with black matte finish. Suitable for right-handed chefs. Single sided (also known as single bevel) blade edge.
210mm Kiritsuke (tanto like slicing knife): Shirogami YSS white paper carbon steel with polished finish. Suitable for both right or left-handed users. Double sided (also known as double bevel) blade edge.
105mm Petty (small utility knife): Shirogami carbon core with textured stainless steel sides. This knife is not from the Osaka region, but the blacksmith is a very talented young blacksmith from another great knifemaking region of Japan. This blade is unique because it has the fantastic cutting properties of a carbon steel knife as the blade edge is shirogami, but has easier maintenance because the clad sides are stainless steel. Double-bevel edge means it is suitable for either right or left handed chefs.
