In Stock Item: 210mm VG10 Single Bevel Chef Knife Curly with Hawaiian koa wood handle
This VG10 Stainless Steel single bevel chef knife has been designed by and made for a professional chef who wanted the benefits of a heavier than normal hard-working every day chef knife, the cutting ability of a single-bevel knife, and the convenience, plus edge-holding capabilities of VG10 stainless steel.
It is simply stunning in its beauty and simplicity of appearance, though the skill involved in making this very unusual knife in stainless steel was anything but simple. It required all the skills of a master bladesmith.
Looking like a cross between a bunka and a gyuto, this knife combines the best of both styles in a single all-purpose hard-working knife that will stand up to the rigors of work in a professional environment.
The cutting side of the knife features a tanto tip and wide tapered beveling, while still incorporating some rounding of the leading edge to allow for cutting with a rocking motion.
True to traditional Japanese knife making, the reverse side of this right-handed knife has a concave shape and only is edged on one side.
VG10 steel has excellent edge holding abilities and is easy to sharpen. It is one of the finest culinary steels available anywhere. The blade has a satin hairline finish.
The handle features a stainless steel bolster and rounded end cap with solid rare, old-growth curly Hawaiian koa wood for a very 'clean' yet beautiful look. While employing a rounded look, it actually has a ridge along one edge for a secure grip.
If you like the weight and feel of a European knife, but want the edge and cutting abilities of a fine hand-forged Japanese knife, this knife is for you!
This knife, as shown, is ready for shipping now!
The blade has a high polished plus hairline finish which looks different in different lighting as you can see by the two different photos!
All craftsmanship is fully guaranteed.
