You will love the beauty of this Japanese hand-forged 210mm (approx. 8"blade) custom made kiritsuke. Equally at home slicing chicken or other boneless meats as it is slicing fish, this knife will be a welcome addition to your knife collection. Use it for precise cuts for decorative accents with vegetables.
Hand-forged in Japan by a master bladesmith, this knife is made from Shirogami carbon steel, also known as YSS White Paper carbon steel. It has a wicked edge with extremely good edge retention and a mirror polish finish. Unlike most traditional style Japanese slicing knives, we requested the blademaker to make this knife with a 2-sided edge for use by either left or right-handed chefs. The blade is signed in kanji by the bladesmith.
Our custom, handcrafted faceted handle is made from exotic and rare old-growth koa wood with a brass bolster and end (pommel) cap, plus extra decorative accents of Mozambique ebony and cinnamon-colored spacers. The koa on this handle is extremely curly and has a beautiful shimmer that makes the feature in the wood seem to dance in different lighting that is unique to koa wood.
