For the best in traditional Japanese hand-forged knives, this 210mm (approx 8-inch) chef knife features a double bevel blade, making it the perfect choice for either left or right-handed use. It will please the most demanding professional or home chef.
You will be delighted with the look, feel and quality.
Hand-forged in Japan in the traditional Japanese style, it has a shirogami carbon steel blade clade with stainless sides and has a smooth looking black matte finish.
With traditional 'wa' style partial tang design, it is no lightweight. Definitely not as lightweight as some traditional Japanese chef knives, it is especially suitable even for men with larger than average hands.
We have added a faceted handle made from exotic Hawaiian curly koa wood with a Mozambique ebony bolster.
Please note that the blade edge is shirogami carbon steel, so extra maintenance is required to prevent either rust or dark spots just like you may remember from old knives your mom or grandma would have used prior to stainless steel becoming popular.
