For the best in traditional Japanese hand-forged knives, this 165mm (approx 6-1/2-inch) vegetable knife features a traditional single bevel blade. Known in Japanese as a nakiri, it is simply the best for vege lovers!

Hand-forged in Japan in the traditional Japanese style, this knife has a single beveled edge for use by right-handed chefs. The blade was hand-forged in the Osaka area of Japan of highest quality shirogami1 carbon steel. It has a bold, textured looking black matte finish on the edged side and a polished concave finish on the back side.
The blade has been signed by the bladesmith in kanji.
With traditional 'wa' style partial tang design, it is no lightweight. Definitely not as lightweight as some traditional Japanese chef knives, it is especially suitable even for men with larger than average hands and will handle all vegetable chopping jobs with ease!
We have added a faceted handle made from exotic Hawaiian kiawe wood with a buffalo horn bolster, Mozambique ebony end (pommel) cap, and nickel-silver accent. We chose kiawe wood for this knife because of its hardness, weight and durability. This curly kiawe is in the mesquite family and is completely food safe.
Please note that the blade edge is shirogami carbon steel, so extra maintenance is required to prevent either rust or dark spots just like you may remember from old knives your mom or grandma would have used prior to stainless steel becoming popular.
