The Charybdis Collectible Chef Knife is a very special addition to our collector series. Available in three sizes and two steel options--Shirogami carbon steel or Gingami 3 stainless steel--the Charybdis features a unique, breathtaking Damascus whirlpool pattern finish.
This exquisite blade and Damascus pattern is the work and creation of an 8th generation Japanese master bladesmith, and we are excited to feature his amazing workmanship as our newest collectible. The blades are designed by and made exclusively for Salter Fine Cutlery. Each blade is signed in kanji by the bladesmith.

Featuring a traditional Wa-style handle, every knife is perfectly balanced for optimal usage. Our handcrafted handles can be sized to fit your grip for added comfort and performance.
The Charybdis can be ordered as a single chef knife or in a set. Blades are available in 240mm, 210mm and 170mm. (210mm Shirogami shown above; 240mm Shirogami shown below)
As part of our Collectors Series, these knives have our signature custom, handcrafted handles in your choice of our rare, premium grade curly koa wood or thuya burl handles with finishing accents of Mozambique ebony or black buffalo horn. Other woods or materials can be used upon request.
Because the whirlpool Damascus pattern on these blades is so remarkable, this collectible chef knife deserved a name befitting its rarity.
Charybdis (kǝ-rib-dǝs), in Greek mythology, was born a naiad, a beautiful sea nymph, daughter of Poseidon and Gaia. Together Charybdis and her father, Poseidon (god of the sea), used their power to flood and conquer land. Infuriated, Zeus punished Charybdis by transforming her into a sea monster and chaining her to the Strait of Messina off the coast of Sicily, where she has engulfed passing ships in her infamous and vicious “whirlpool of death.” Odysseus narrowly escaped Charybdis as he navigated this passage in Homer’s Odyssey.
We bring you the mystique of this mythology sea monster in the depths of our bladesmith’s signature Damascus pattern, so unique and rare that it is registered with the government of Japan.
The Charybdis chef knife can be designed with your choice of fittings at either the top or the bottom of the handle, or at both ends for an extra-decorative look. (Additional fitting configurations are available upon request.)
